Why can someone who is ambidexrous write with either hand?

Because they are physically trained to be able to do anything with either their right or left hand.

An ambidextrous person is one who is both left and right handed, that is the definition, so they can write with either hand. They can also eat, play sport, musical instruments and other activities with either hand.
